No need for a campfire here! Just grab a box of graham crackers, some vanilla ice cream and chocolate and you’re go to go. Check out how we turned this traditional camping treat into a fabulous frozen dessert – minus the messiest part. You need to make this part of your next summer getaway.
S’more Ice Cream Sandwiches
- 8 oz. semi sweet chocolate chips
- 1/2 cup heavy cream
- 6 graham crackers, broken up into sticks
- 1/4 cup multicolored sprinkles
- 1-2 cups, vanilla ice cream
Combine the chocolate chips and cream in a microwavable bowl and heat for 1 minute. Stir and repeat, heating in 30 second increments until chocolate is melted and smooth.
Dip one face of each graham cracker into chocolate mixture. Then, dip half of the chocolate coated side of the crackers in sprinkles. Refrigerate for about 30 minutes or until the chocolate is set.
Remove the graham crackers that are chocolate dipped but without sprinkles from the refrigerator and set aside with the chocolate side facing up. Scoop vanilla ice cream into a plastic baggie and pipe onto each of the chocolate graham crackers.
Top with sprinkled cracker. Eat immediately or place in freezer until snacktime. Serves 4-6.
